I sampled a piece of this bread that had a spot on it, appearing to be mold (this is unfortunate because we bought this bread 2 days ago)! I chose it because I can most likely identify this fuzzy green spot to be “bread mold” or, growth of zygomycetes, belonging to the phylum Zygomycota. The majority of the tissue from this bread seemed to be undamaged, except for this spot. From this sample I expect to see high fungal growth. When mold grows on bread it often grows fast, so when it’s supplied with media, I expect it to grow a lot!
